Monin, a leading flavor house, has a team of internal flavor experts and consumer insights specialists who develop flavor predictions. They predict consumers will (1) show more interest in where the ingredients come from, favoring locally sourced and sustainable options as well as unique ingredients, (2) seek modern, creative twists on familiar comfort foods, and (3) treat themselves to affordable little luxuries. Visual appeal will continue to be a major driver.

Specific flavors they predict will be popular include: strawberry Dubai chocolate bar, Reel dirty soda, lavender blueberry latte, yuzu champagne granita, matcha lemonade, and golden lion’s mane coffee.

Pinkberry launched Green Tea Lemonade frozen yogurt way back in 2018.

Whole Foods Market’s Trend Council, a collective of over 50 Whole Foods team members, released its top 10 anticipated food trends for 2025. The trends include international snacking, fusion foods, crunchy foods, new forms of tea (e.g., sparkling tea, plant-based milk tea), plant-based aquatic ingredients (e.g., sea moss), and protein (e.g., cottage cheese) as top trends.

Flavors that fit these trends include mango sticky rice, watermelon chili, kulfi cardamom chai, and passion fruit sea moss.

Yogurtland introduced Chili Mango sorbet back in 2017 and more recently, Pineapple Mango sorbet in 2023.

The National Restaurant Association’s What’s Hot 2025 Culinary Forecast, based on what industry professionals think will be hot, points to sustainability and local sourcing as key trends, along with the growing popularity of Southeast Asian flavors, particularly Korean, Filipino, and Vietnamese cuisine. They also think fusion mashups will be big, along with fermented foods.

The top flavors will be honey and seeds, functional mushrooms, pineapple, tamarind, and ube.

Pinkberry introduced ube honey frozen yogurt in January 2024.

Torani, a leader in flavor syrups, celebrates its 100th anniversary with the “Flavor of the Century.” Diamond, a fantasy flavor, is a sparkling wine and vanilla combination that adds a touch of elegance to any dessert. In addition, “100% of Torani’s profits from Diamond Syrup through the end of 2025 will go to non-profit organizations creating work readiness and first job opportunities for at-risk youth, adults with intellectual disabilities, or justice-impacted individuals—communities that Torani also supports through its Cafe Opportunity Fund and other give-back initiatives.”

Based on third-party and proprietary data, Rubix Foods’ The NEXT Flavor Report identified five key flavor trends that Gen Z is driving. They are Complex Heat that is spicy but not crazy spicy, Sweet (fruits, florals, sweet + spicy, sweet + salty), Mashups (brand collaborations, flavor extensions, freaky fusions), Worldwide Cravings (Korean, Japanese, Chinese), and Turning Items Into Flavors (soda-inspired flavors, cocktail-inspired flavors, chip-inspired flavors, breakfast-inspired flavors, dessert-inspired flavors).

Specific flavors: Dragon fruit, guava, passion fruit, lavender, hibiscus, cherry blossom

This reminds us of when 16 Handles turned French fries into a froyo flavor last summer. And speaking of collabs, SweetFrog just partnered with Care Bears on the Love-a-Lot Swirl, “a combination of Dole Soft Serve pineapple swirled with Dole Soft Serve Orange and Raspberry, inspired by Love-A-Lot Bear.”
