The pairing of croissants and soft serve is having a moment, though croissant ice cream cones have been around for almost a decade. All signs point to another summer of crones, IceCRONES, Cro-Yo, and croissant froyo.
History of Croissant Cones and Recent Viral Cones
In 2016, the Crone (aka croissant cone), was patented in the UK by Dum Dum Donuterrie. However, it was London’s British Patagonia, a vegan viennoisserie by Michelin star chef, Matias Barbat, whose IceCRONE sparked an international trend and viral sensation last summer. IceCRONEs are served seasonally and they’ve returned for the 2024 season.
British Patagonia describes the IceCRONE as “a croissant cone filled with soft serve ice cream, we have two flavours (Choco and Vanilla) and you can choose different toppings. All vegan, all homemade. And if you are not vegan, we dare you to try as you won’t notice any difference with dairy ice creams.” New soft serve flavors were added after the initial launch.
Across the pond in the United States, Supermoon Bakehouse in New York City introduced Croissant Butter soft serve ice cream in 2018. The croissant bakery made its own soft serve with croissant butter and topped it with croissant crumbs and a croissant slice. Since then, croissant butter soft serve pops up for limited periods of time with new soft serve flavors.
On the West Coast, Tyler Florence’s Miller & Lux Provisions in San Francisco offers a croissant soft serve cone that went viral last summer, selling 300 cones per day. The hope is to “ramp up” the offering for the first summer at the Union Square location.
Croissants & Froyo
If you’re wondering what this has to do with frozen yogurt, croissants have been used as cones at Heavenly Yogurt in San Diego (Cro-Yo), and flat versions are offered as froyo toppings at Yogurt World in South Korea. Froyo Heaven in Lebanon uses a chocolate croissant as a base for the Em Ali Soft Serve. The croissant is paired with sweet milk, pistachio flakes, shaved almonds, and soft serve froyo. And Yonique Froyo offers croissant cones topped with froyo and sauce at the Sunway Centre branch in Brunei. Yogorino in Lainate, Italy splits open the croissant and fills it with froyo.
Cookie croissants, aka the crookie, are another viral trend, featuring croissants stuffed with cookie dough. In April 2024, Yogen Fruz posted a Facebook Reel where they make a cookie croissant and top it with a scoop of froyo and a drizzle of chocolate sauce. Cookie croissants are easy to make. You can use store-bought croissants, top them with cookie dough, and bake. They wouldn’t work as cones though.
And so, the croissant met its match with soft serve around the world, combining tradition with modernity to become the star of the dessert world.
